After the lid is opened, as long as it gets air, sediment, discoloration and a transparent layer called "main" can form on the vinegar surface.This is not a sign of deterioration and the vinegar can be filtered and used again if desired. This shows that the fermentation continues and the vinegar has not been pasteurized and micro-filtration processes.
