Goat Feta Cheese, Strawberry, Pomegranate Sour Summer Salad Recipe

  • 250g arugula or spinach or 50/50 mix
  • ½ cup parsley leaves (thin stems are fine) or basil leaves
  • 450g strawberries, quartered
  • 1 small cucumber, sliced ​​into 1 cm pieces
  • 280 g cherry tomatoes (any color), halved
  • ¼ cup sliced ​​red onion
  • ½ cup crumbled Kapra Goat Feta Cheese 


Combine all sauce ingredients in a blender or small food processor until smooth and creamy.

Put the arugula or greens in a large salad bowl or large serving platter. Add remaining ingredients and drizzle with 3 tablespoons of sauce. Mix it gently. You can serve with additional pomegranate syrup on the side.
